YUM! These were delicious – even though i had to leave out an ingredient because I forgot to buy when out at the grocery store! For my second meal, I decided to make a vegetarian burger since Summer is around the corner and most people rely on barbecued hamburgers and hotdogs. I have tried plenty of pre-made vegetarian burgers from the store, such as Chipotle Black Bean Burgers, but my options are always limited because most meatless burgers are made with mushrooms (yuck). I decided to choose to healthy ingredients and start from there – sweet potato and chickpeas.
I came across a recipe online, bought the ingredients (forgetting to pick up frozen peas), and got started. The recipe page also had a good video on how to cook sweet potatoes quickly, which was beneficial because it is impossible to throw uncooked sweet potato into a food processor (would probably end up buying a new machine after that). The only problem I came across during the preparation was my food processor is slightly too small for the recipe. I had to throw in the mixture in separate increments which became very time-consuming.
Overall, the burgers turned out really well. I fried them in a pan on the stove and then threw them in the oven for an additional 10 minutes. The only thing I think was missing from this recipe was something to bind the mixture together. The burgers fell apart very easily and did not hold their shape at all. However, I was happy with the ingredients used because they can really be supplemented by any flavour (did not have to be curry flavours). Another thing I would add would be some sort of green vegetable (or at least some spinach or kale as a burger topping).

Sweet Potatoes – Vitamin D, Vitamin C, Iron, etc.
Chickpeas – Fibre, Protein, etc.
Ughh as much as I love eating meat those look awesome. I honestly didn’t know you were a vegetarian and I think this project is awesome. I love food but hardly know how to cook. What are you finding most challenging in this project? Are you finding you like foods you never thought you would?

I am actually not a vegetarian completely – I just try to limit how much meat I eat! I’m finding this project difficult in that I need to find recipes a bit more challenging. I need to start focusing on cooking techniques rather than just the ingredients/recipe. It is fun though! I recently made spinach and artichoke dip bites for a potluck – I am posting about it soon!

This is an awesome project! I am a terrible cook so maybe by the time the end of June comes around, I’ll see how good you are and be motivated to do my own independent learning project!
