Spinach and Artichoke Dip BITES :)

First of all, who doesn’t like spinach dip?  This appetizer seems to be a staple at potlucks.  I was invited to a get-together with old co-workers on the weekend and we decided to each bring an appetizer for the night.  I thought this would be the perfect opportunity for me to make something vegetarian and contribute to my learning project for ECMP355.  I started scrolling through Pinterest, I Googled recipe ideas, and eventually decided I would make a classic spinach and artichoke dip.  Keep in mind, this recipe is vegetarian, not vegan.  This just seemed too easy – what would I really be learning?  I decided to jazz it up a bit and make individual bites filled with the dip.

Has anyone ever used wonton wrappers before?  These are popular amongst people who want a reduced carb diet as they can still hold a filling but not add on the extra pounds that come with pastry or dough.  These can be picked up at most grocery stores – I found my package at Sobey’s.  I found a recipe online with instructions for making these little bites – however I did not like the choice of recipe for the dip, so I searched for a more healthy version online.  I came across a “skinny” version of spinach and artichoke dip that still incorporated flavourful and rich ingredients.  The recipe page also had step-by-step pictures of the cooking process – very beneficial and easy to follow!  It was great to view these photos throughout the process.

Overall, the recipe for the dip was very easy to follow and turned out delicious!  It did not take long at all – the prep time took approximately 15 minutes and cooking time around 15 minutes as well.  Of course, I had to balance my attention between two different sets of instructions because I had to keep an eye on the wonton wrappers as well.  Out of the package, the wrappers are slightly covered in flour so I rubbed them with a bit of grapeseed oil and pushed them down into the mini muffin pan.  I baked them in the oven for about 7 minutes before I added the filling and cooking for an additional 7-10 minutes.

Notice one of the bites are missing from the muffin tin?  Couldn’t help myself… These were delicious!

    1. Oh my gosh, can I come eat with you sometime!? I’m somewhat of a hopeless cook. I still enjoy reading about cooking (and watching Masterchef), though, mostly to torture myself. I enjoyed the pictures you showed! Keep everything up!
